 Black Tea
Black tea is the fermented (oxidized) form of tea. First the tea is withered or dried over a low heat. Then it is rolled into a form similar to what you see in loose tea. Next and most importantly, the tea is fermented. This is really not fermentation in the traditional sense - instead it is oxidized in a slightly humid environrment. This is the key process that brings out the flavor of the tea. It is the tea maker's art to time this just right. Finally it is fired at a higher temperature to fix the flavor of the tea before being sorted into different leaf quality and sizes.
Black tea contains caffeine but much less than coffee - about 40 mg per cup, depending on strengh and steep time. (Coffee, by comparison, has 80 - 100 mg.).

 Herbal Tea
Herbal Infusions, fruit based tisanes and floral infusions are not truly tea (Camilla Senensis) at all. They are dried herbs or fruits. There are only three types of real tea, black tea, green tea and Oolong tea. For our herbal blends we search the world for the finest available herbs and blend them to have the flavors complement one another. All of our herbal blends contain no caffeine. |
 Green Tea
Green tea is the unfermented form of tea. It starts with the same type of plant as black or oolong tea but the processing is very different. The leaves are steamed in order to inactivate the enzymes at the first stage of processing. (Black tea, by contrast is dried over dry heat which increases enzyme and therefore caffeine.) After this it is rolled, then fired at a high temperature to fix the flavor of the tea.
Green tea has less caffeine than black tea; approximately 20 mg per cup as opposed to black tea which has approximately 40mg. (Coffee, by comparison, has 80 - 100mg.) |

 White Tea
White teas come from the Camellia sinensis plant, just like green tea, oolong tea and black tea. But white tea is picked early in Spring when all the leaves are still in a bud and covered with fine white hair, hence the name, white tea. Production of white tea is similar to green tea and has very light processing and no fermentation. The flavor of white tea can vary from light, sweet, savory or velvety.

 Chai Tea
Chai is the Hindi word for tea. Today, Chai is typically made with black tea and a variety of sweet spices such as cinnamon for a tea that is incredibly delicious.
